First name does not show up in subject line
When I type in {FIRST}, ... in the subject line of the email, instead of filling in that field, it shows up as {FIRST} in the email to the customer.

If the particular person that you are sending an email to does NOT have anything recorded as their first name, the email will have nothing to put in the place of the {FIRST} tag.
When editing your email, there is a button labeled "Advanced Settings" - if you click this, you will see a setting called "Alternate Name", Whatever you type here, will be used to replace the {FIRST} tag if that contact does not have a first name recorded. For instance, if you typed "friend" into the "Alternate Name" field, and then sent an email with the subject line "Dear {FIRST}" to a contact who did not have a first name, then the resulting email would say "Dear friend".
