Tags function

Hi!
Where can we find information on how to use "tags"? Also does anyone know if it's possible to create a "tag" with all buyers that opened a specific email? Or create a tag of all buyers who have ordered in the last 6 months? Or all buyers that have used a specific coupon code on an order?
