How does one add a product variation?

I can add them if they are already on my list of possible variations. But I can't make new ones. How do I make new variations? Not just new product variations, but also different colors and such?

Version 4.1 allows you to add variations to existing products, you are currently on version 4.0 which requires you to delete the product and start with a new product to add an option
